The new Upholder is amazing. The other ship wasn't even close to the quality of that ship.

Tried to find other ships that are missing.
Hoffnungsschimmer and The Harmony come to mind.

I can't seem to find an entry of the Ish'tar at all either. Maybe I search wrong.

Adding to Skorak's post, I know that there's also that SRP uniquely modeled Outcast Destroyer Mini-Carrier with the radar dish on top. Can't for the life of me remember the name, though. But that ship, whatever its called, also lacks a wiki page.

It's not. I am Maltese Player on my own and I had taken care for that a long time ago. But it is not an in game usable ship atm, so you do not find it at the ship pages. Look at the Maltese arsenal on the Outcast or Maltesian Navy page.
